Renowned chef Osman Sezener, who entered the 2024 Michelin Guide selection with three restaurants, had the pride of introducing Turkish cuisine to the world at the NATO Summit. Sezener shared details of the special dinner hosted by Emine Erdoğan, wife of President Recep Tayyip Erdoğan, at the Çankaya Mansion.
Seven Appetizers from Seven Regions
The dinner, served to the spouses of heads of state and government, was elegantly presented on special ceramic plates. The menu featured regional flavors such as Urla artichoke with mastic, honey with Erzincan tulum cheese, Trabzon butter, and Antalya hibeş and tarhana appetizer.
For the main course, a choice of beef ribs with firik bulgur or Çeşme lahos fish with mastic gum was offered. For dessert, white chocolate mousse with Aegean yogurt and forest berries were served.
Anatolian Flavors at the Open Buffet
Sezener noted that at the open buffets prepared for guests, delegations, and members of the press at the Presidential Complex, there were also many regional specialties such as Tire meatballs, Urla octopus, Adana kebab, döner, and keşkek.
Guests Give Full Marks
Emphasizing that the guests took great pleasure in tasting flavors from every region of Türkiye, Sezener said, "They especially liked the Urla artichoke with mastic. The lahos fish with Çeşme mastic sauce was a very different experience for them."
Sezener added, "As a country, we provided a wonderful welcome. The NATO Summit left behind many beautiful food stories."
A Team of 70 Served 20,000 People
Sezener shared that throughout the summit, a kitchen staff of at least 70 served more than 20,000 people, adding that the organization was a huge experience for him and his team.
Emine Erdoğan's Fine Touch
Sezener noted that preparations started weeks in advance and special products were sourced from all across Türkiye, and that Emine Erdoğan oversaw the process down to the finest detail. "Emine Erdoğan tested all the dishes and they were served to the guests only after her approval," he said.
